Instructions

1) Preheat oven to 375 degrees.
2) Oil and flour an 8 inch cake pan or muffin tins, or use paper liners.
3) Combine brown sugar, sugar, flour, baking soda, cinnamon, nutmeg and all spice in a large bowl, breaking up the brown sugar as much as you can (little clumps are fine.)
4) You can add or omit spices based on your taste.
5) Make a well in the middle of the dry mixture and pour the applesauce and oil into the well; use as few stir-strokes as possible to combine into a lumpy but streak-free batter.
6) Fill each cup 3/4 full or pour batter into an 8 inch cake pan.
7) Bake 30 minutes for cake or 20 minutes for cupcakes.
8) Add topping while the cupcakes are still hot.
9) Topping: Combine sugar and cinnamon, pour in melted margarine and stir. While still hot and liquidy, spoon over hot cupcakes.
10) Story: Annie made these the first time for a stole-making party at YDS. She was very excited to have made vegan cupcakes, and got a little teased for it. The cupcakes were a hit, and soon became Annie’s favorite cupcakes.
