Leftover Take Out Rice Pudding


Ingredients

Ingredient Qty.   Unit
rice, cooked 2   c
skim milk 2   c
sugar 1/3   c
chopped dates or raisins 2/3   c
salt 1/4   tsp
butter, room temp 1   TBSP
egg, beaten 1   ea
egg yolk, beaten, optional 1   ea
vanilla 1/2   tsp
cinnamon 1/4   tsp
fresh grated nutmeg 1   pinches


Instructions

1) Combine rice, milk, sugar and salt in heavy saucepan.

2) Cook over medium heat (it will boil.) Stir occasionally until thick and creamy, 15 minutes

3) Temper egg and egg yolk before adding to the rice mixture. Turn off the heat and stir in eggs, chopped dates, butter and vanilla.

4) Add cinnamon and nutmeg or spoon into serving dishes and garnish to taste.
