Microwave Cheesecake
Ingredients
Instructions 1) First three ingredients for crust, next 4 ingredients for filling, final 2 for topping. 2) Microwave margarine on full power in pie plate 3) Stir in crumbs and sugar 4) Press over bottom of 8 inch pie plate and up the side, 1/2 inch 5) In glass mixing bowl, microwave cream cheese, 40-45 seconds 6) Beat in sugar and egg 7) Blend in lemon juice 8) Pour into crust 9) Microwave on high for 5 minutes 10) Combine sour cream and sugar for topping, spoon over cheesecake 11) Microwave on high for 2 minutes 12) Cool—store in refrigerator 13) Story: This recipe comes from Sue and Paul’s microwave cooking class in 1979.
