Pumpkin Pancakes


Ingredients

Ingredient Qty.   Unit
Box Jiffy Cornbread Mix 3   ea
can pumpkin 8   oz
milk 2   c
nutmeg, optional 1   pinches
cinnamon, optional 1   pinches
pumpkin pie spice, optional 1   pinches


Instructions

1) Heat electric griddle to 350 - 370.

2) Spread thin layer of oil on griddle with paper towel before each batch.

3) Make small muffin-sized scoops.

4) Important: Cook for 3 minutes on each side, flip only once.


Yield: 8 servings
