Recipe: Christmas Eve Meatballs

Ingredients
Ingredient Qty. Unit
extra lean ground beef, sirloin, or beef pork veal 2 lb
soy sauce 2 TBSP
onion, minced 2 TBSP
eggs 2 ea
dry parsley 1/3 c
garlic cloves, minced 2 ea
or garlic powder 2 tsp
salt 2 tsp
ground black pepper 1/4 tsp
can jellied cranberries 1 ea
ketchup 1/3 c
brown sugar 2 TBSP
Heinz Chili Sauce 12 oz
fresh lemon juice 1 TBSP

Instructions
1) Form beef, soy sauce, onion, eggs, parsley, garlic, salt and pepper into mini meatballs and brown in teflon coated frying pan. (Use slightest amount of olive oil in pan.)

2) Combine sauce ingredients in small saucepan. Stir to melt and continue stirring until generally mixed.

3) Pour sauce over meatballs. Bake at 350 for 45 minutes or less. If oven not available --- can use stovetop and cook in medium/large sauce pan.

4) Servie with toothpicks or serve with Peppridge Farm dinner rolls for mini sandwhiches. Delicious!

5) Story:I have made these every Christmas Eve for years, since the boys were fairly young. For many years on Christmas Eve, Uncle Michael McCulken came to our house and celebrated Mass. We invited all the Albrights, Rose and Bill and their kids, Bob and Joan Doyle and their kids, and periodically some other friends to join us for Mass and then after, a Christmas Party. Everyone brought something to eat. Each year, there were many "traditional" treats, this is one of them.
