Mashed Cauliflower and Potato


Ingredients

cauliflower 1   ea
Yukon gold potato 3   ea
chicken stock 1   gal
butter 2   TBSP
sour cream 3   TBSP
scallions 3   ea
fresh parsley 1/3   c


Instructions

1) Dice scallions and parsley.

2) Clean cauliflower and potatoes (peeled if desired) and cut into 1-inch pieces.

3) Bring stock to a boil and add cauliflower and potato. Wait for pot to come back to tempurature, then boil 8 minutes, or until cauliflower and potato pieces are firm, but pierceable with fork. Drain (not thoroughly, a touch of extra stock in the pot is nice.)

4) Add scallion, parsley, butter and sour cream, salt and pepper. Mash manually, leave coarse. Taste and adjust salt. Add butter or sour cream if necessary.


Yield: 8 Servings
