Instructions
|
1) Preheat oven to 350.
2) Beat shortening and sugar at medium speed of a mixer until light and fluffy (about three minutes). Add syrup, vanilla, and eggs, beating well.
3) Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, oats, coconut, baking powder and salt. Add flour mixture to sugar mixture; stir just until blended.
4) Pour batter into a 13 x 9 inch baking pan coated with cooking spray. Bake at 350 for 35 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.
5) Story: Annie made these when she felt like baking but not like grocery shopping. They are very yummy ... don't skimp on the coconut!
