Kale and Beans
Ingredients
Instructions 1) Blanch kale in boiling water for 5 - 7 minutes. Drain and set aside. 2) Dice onion and mince garlic. 3) Sweat onion and garlic in olive oil until tender. 4) Add kale to pan and saute, add undrained beans and heat through. 5) Pour into a bowl and toss with feta. 6) Note: We use reduced fat feta and can't tell the difference, and like to add extra beans, but be sure to drain the second can so there's not too much liquid.
