Oatmeal Raisin Cookies


Ingredients

Ingredient Qty.   Unit
room temperature butter 1   c
firmly packed brown sugar 1   c
granulated sugar 1/2   c
eggs 2   ea
vanilla 1   tsp
flour 1 1/2   c
baking soda 1   tsp
cinnamon 1   tsp
salt 1/2   tsp
quick or old fashioned oats 3   c
raisins 1   c


Instructions

1) Heat oven to 350

2) Rehydrate the raisins by soaking them in warm water (or rum, for a different flavor)

3) Beat together butter and sugars until creamy

4) Add eggs and vanilla; beat well

5) Add combined flour, baking soda, cinnamon and salt; mix well

6) Stir in oats and raisins; mix well

7) Drop rounded tablespoonfuls onto ungreased cookie sheet

8) Bake 10-12 minutes or until golden brown

9) Cool 1 minute on cookie sheet; remove to wire rack

10) For bars: Bake 30-35 minutes in ungreased 13 x 9 inch metal baking pan.


Yield: 4 dozen
