Recipe: Bread, radishes, butter and salt

Ingredients

bunch small, firm, fresh radishes, about two dozen 1 ea
best-quality freshly sliced brown or white bread, cut into quarters 8 ea
unsalted room temperature butter 1/2 lb
Fleur de sel, coarse salt, or sea salt to taste 1 ea

Instructions
1) Wash (don't peel) and trim radishes; if the radish greens are nice and fresh, set a dozen or so tender, fresh leaves aside. Place the washed whole radishes in a plastic container; fill container with enough water to cover the radishes, add 4 to 6 ice cubes, and refrigerate for at least 1 hour.

2) Just before serving, thinly slice radishes into rounds (sliced paper thin and translucent). Chop or sliver radish leaves.

3) Spread one side of each piece of bread generously with butter. Top with some chopped radish leaves and then cover with the slices of radishes.

4) Serve, offering the salt at the last minute before eating (let each guest sprinkle the salt on).

5) Story: We saw this on an episode of "No Reservations"--Anthony Bourdain said it is his favorite food. Sean found this recipe online, and the author recommends serving these appetizers/snacks with wine such as pinot gris or chardonnay. I like it as an after-school snack with a fine ginger ale. =)
