Recipe: Mom's Banana Bread (Cooking Light)

Ingredients
Ingredient Qty. Unit
Sugar 1 c
Butter, softened 1/4 c
Mashed, ripe bananas 1 2/3 c
Skim milk 1/4 c
Large egg whites 2 ea
Low-fat sour cream 1/4 c
All-purpose flour 2 c
Baking soda 1 tsp
Salt 1/2 tsp
Cooking spray 1 ea
9x5 loaf pan 1 ea

Instructions
1) Pre-heat oven to 350 degrees.

2) Combine sugar and butter in bowl, beat w/ mixer at medium speed until well-blended. Add banana, milk, sour cream and egg whites; beat well.

3) Lightly spoon flour into dry measuring cups, level w/ knife. Combine flour, baking soda and salt; stir well. Add flour mixture to banana mixture, beating until blended.

4) Spoon batter into four mini-loaf pans or one 9x5 loaf pan, coated w/ cooking spray.

5) Bake 70 minutes (9x5 pan) or 45 min. (mini) until toothpick comes out clean. Cool in pan on rack for 10 minutes. Remove from pan. Cool on rack.

12 slices from one loaf
