Recipe: Banana Chocolate Chip Oatmeal Cookies

Ingredients

all purpose flour 1 c
baking powder 1/2 tsp
baking soda 1/2 tsp
salt 1/4 tsp
butter, room temperature 3 TBSP
sugar 1/2 c
brown sugar 1/2 c
mashed banana, about one medium 1/4 c
egg 1 ea
vanilla extract 1 tsp
oats 1 1/2 c
chocolate chips 1/2 c

Instructions
1) Preheat oven to 350 and line baking sheets with parchment paper.

2) In a small bowl, whisk together flour, baking powder, baking soda and salt.

3) In a large bowl, cream together the butter and the sugars. Beat in egg and banana, followed by the vanilla extract.

4) Gradually, on low speed or by hand, add in the flour mixture.

5) Stir in the oats and chocolate chips.

6) Drop dought by tablespoonfuls onto prepared baking sheet, about 1 1/2 inches apart.

7) Bake for 8-12 minutes at 350 until set and lightly browned.

8) Let cookies cool for about 5 minutes on the pan before transfering them to a wire rack to cool completely.

9) Story: I had four overripe bananas in the freezer and I felt like baking. I have three set aside for some delicious cooking light banana bread, so I had one left to try something new. This is the only banana cookie recipe I could find that doesn't result in "cakey" cookies ... they are delicious. The original recipe called for 2 TBS of butter; I added another TBS to ensure that they wouldn't end up thick and cakey, and that brought the cooking time down. If you prefer a slightly thicker cookie, you can use 2 TBS and bake a bit longer, up to 15 minutes. The original recipe also called for a whole cup of chocolate chips, which sort of defeats the purpose of having a banana-flavored cookie. 1/2 cup was more than enough, and I liked the banana flavor so much that I'd probably leave out the chocolate entirely next time.
